Cut ribs into individual riblets using a sharp knife.
Bring a large pot of water and a tablespoon salt to a rolling boil.
Once water comes to a boil, place riblets into the water and boil for 30 minutes.
Drain and let riblets cool down.
In a mixing bowl, combine honey, soy sauce, minced garlic, hoisin sauce, dry mustard and vinegar. Stir until combined.
Marinate riblets in the sauce overnight in the fridge.
Adjust oven rack to 4 inches below the heating element. Set oven temperature to broil.
Place riblets on a broiler pan.
Baste riblets with marinade and cook under broiler for 3-4 minutes.
Use tongs to turn the riblets over and baste them with additional marinade.
Broil riblets for another 3-4 minutes until they are heated through. Cook until they are browned and crispy along the edges.
Discard any excess marinade.
Serve with lots of napkins!
