Sourdough Banana Bread

The addition of sourdough starter gives this banana bread a lovely crumb and wonderful flavor.

Equipment

  • 9 inch loaf pan

Ingredients
  

  • cup all purpose flour
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 3 very ripe bananas
  • 1 cup active sourdough starter
  • 1 large egg
  • 1 tsp vanilla
  • ¾ cup brown sugar
  • 1 stick butter, softened
  • 1 cup semi sweet chocolate chips
  • 1 cup pecans, roughly chopped

Instructions
 

  • Preheat oven to 350℉.
  • Generously grease a 9 inch loaf pan. Set aside.
  • In a small mixing bowl combine flour, salt and baking soda. Stir to combine. Set aside.
  • In a large mixing bowl mash bananas with a fork or use a pastry cutter.
  • Add starter, egg, vanilla, and softened butter to the mashed bananas. Stir to combine.
  • Add brown sugar and mix well.
  • Slowly add the dry ingredients to the bowl and stir until well combined.
  • Stir in the chocolate chips and chopped pecans.
  • Transfer batter into prepared loaf pan.
  • Bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean.
  • Allow loaf to cool on a rack to room temperature in the pan before slicing.
