Double Chocolate Coca Cola Cake

For the cake:
- 2 cups sugar
- 2 cups flour
- ½ tsp salt
- 1 cup coca cola, not diet
- ½ cup vegetable oil
- 1 stick butter
- 3 tbsp cocoa powder
- 2 large eggs
- ½ cup buttermilk
- 1 tsp baking soda
- 1 tsp vanilla
For the frosting:
- 1 stick butter
- 3 tbsp cocoa powder
- 6 tbsp milk or cream
- 1 tsp vanilla
- 3¾ cup powdered sugar
For the cake:
Preheat oven to 350°F.
Grease a 13X9 inch baking dish.
In the bowl of a stand mixer, combine the sugar, flour and salt.
In a sauce pan, combine cola, vegetable oil, butter and cocoa powder. Bring mixture to a boil.
Pour the boiling cola mixture over the dry ingredients and beat well.
Add the eggs, buttermilk, baking soda, and vanilla, beat well.
Pour cake batter into prepared baking dish.
Bake cake for 40-45 minutes.
Remove pan and allow cake to cool for about 10 minutes before frosting.
Make the frosting:
In a large saucepan combine butter, cocoa powder and milk.
Heat until the butter melts. Remove from heat.
Whisk in the vanilla and powdered sugar.
Spread frosting on cake while it's still warm.
Allow frosted cake to cool to room temperature before serving.
Cut cake into squares and enjoy!
Top with a scoop of vanilla ice cream if desired.
