Tried & True Classic Recipe, Double Chocolate Cola Cake

I stumbled upon this recipe a long time ago and it got filed away to be made someday. When I came across it again I knew I had some buttermilk hanging out in the fridge that needed using up so I figured it was the perfect time to finally make this delectable chocolate cake.

The cake will not be done in 20-25 minutes.

It’s made completely from scratch, so you have bragging rights with your family and friends when you serve it up. Don’t let the fact that it’s made from scratch scare you off, it’s actually quite easy to make and well worth the effort!!! You will be greatly rewarded with numerous compliments and “mmms” and “ahs” as they devour each piece. Trust me they will be eyeing the cake wanting a second helping!!!

This does not produce the fluffy consistency you get with a boxed cake, it’s a denser cake, a more fudgy consistency, it’s more similar to the texture you get with a pound cake. What I love most is the frosting to cake ratio. It’s absolutely perfect. There’s just the right amount of frosting with each delectable bite. You won’t get a mouthful of overly sweet frosting with each bite.

Preheat oven to 350°F and gather together the ingredients you need for the cake.

Grease a 13X9 inch baking dish. You can use non-stick spray, but I like to use the last little bit of butter that’s on the butter wrapper to grease the pan.

In the bowl of a stand mixer, combine 2 cups sugar, 2 cups flour (use scoop and sweep method to measure the flour), and 1/2 teaspoon salt. 

In a sauce pan, combine vegetable oil, butter, cola and cocoa powder.

Bring mixture to a boil. 

Pour cooked chocolate/cola mixture over the dry ingredients and beat well. 

Add the eggs, buttermilk, baking soda, and vanilla, beat well.

Beat well.

Pour cake batter into prepared baking dish. Bake cake for 40-45 minutes. 

NOTE: The original recipe says to bake cake for 20-25 minutes. I had to bake this cake for 45 minutes before the center was no longer runny. Check for doneness with a toothpick after 25 minutes. When a toothpick inserted in the center of the cake comes out clean, cake is done.

Remove pan and allow cake to cool for about 10 minutes before frosting.

While the cake is cooling, it’s time to make the luscious frosting.

In a large saucepan combine butter, cocoa powder and milk.

Heat until the butter melts and remove from heat.

Whisk in the vanilla.

Add chocolate to powdered sugar and beat until lumps are gone and frosting is smooth. 

Pour frosting onto cake while it’s still warm.

Spread out frosting and allow cake to cool to room temperature.

Oh my goodness, this cake is so fudgy and chocolaty and utterly delectable. The buttermilk makes it rich and decadent, while the addition of the cola gives it a lovely sweetness and enhances the chocolaty flavor of this cake. Add the chocolate frosting that’s not too cloyingly sweet; it’s just right for this lovely cake. The cake to frosting ratio is spot on perfect!!!

Calling all chocoholics! You are going to absolutely LOVE this cake!!! Heck, you don’t need to be a chocoholic to enjoy this utterly delicious chocolate cake.

Oh and did I happen to mention?…it’s FABULOUS served with a scoop of vanilla ice cream!!!

Ingredients
  

For the cake:

  • 2 cups sugar
  • 2 cups flour
  • ½ tsp salt
  • 1 cup coca cola, not diet
  • ½ cup vegetable oil
  • 1 stick butter
  • 3 tbsp cocoa powder
  • 2 large eggs
  • ½ cup buttermilk
  • 1 tsp baking soda
  • 1 tsp vanilla

For the frosting:

  • 1 stick butter
  • 3 tbsp cocoa powder
  • 6 tbsp milk or cream
  • 1 tsp vanilla
  • cup powdered sugar

Instructions
 

For the cake:

  • Preheat oven to 350°F.

  • In a sauce pan, combine cola, vegetable oil, butter and cocoa powder. Bring mixture to a boil.
  • Pour the boiling cola mixture over the dry ingredients and beat well.
  • Add the eggs, buttermilk, baking soda, and vanilla, beat well.
  • Pour cake batter into prepared baking dish.
  • Bake cake for 40-45 minutes.
  • Remove pan and allow cake to cool for about 10 minutes before frosting.

Make the frosting:

  • In a large saucepan combine butter, cocoa powder and milk.
  • Heat until the butter melts. Remove from heat.
  • Whisk in the vanilla and powdered sugar.
  • Spread frosting on cake while it's still warm.
  • Allow frosted cake to cool to room temperature before serving.
  • Cut cake into squares and enjoy!
  • Top with a scoop of vanilla ice cream if desired.
