Pineapple Tea

- 1 ripe pineapple
- water
- 1 tsp honey, optional
Remove skin from pineapple.
Place skin and core into a large sauce pan.
Add enough water to completely cover skins and core.
Cover pan and bring to a boil over medium high heat.
Simmer for 10 minutes.
Remove from heat and allow tea to come to room temperature.
Strain tea, discard skins and core.
Refrigerate tea, covered.
Serve tea chilled over ice.
Add a teaspoon of honey for added sweetness, optional.
Enjoy!
