Cranberry, Apple, Pecan, Chicken Salad

A flavor packed treat! This delectable, easy to make chicken salad is loaded with sweet dried cranberries, crunchy pecans, and bites of tart green apple.

- 1¼ cup mayonnaise
- 1 tsp dijon mustard
- 1 tsp kosher salt
- ½ tsp pepper
- 3 cups cooked, shredded chicken breast meat
- 1 small Granny Smith apple, cored and diced
- ⅓ cup dried cranberries
- ⅓ cup pecans, roughly chopped
Place shredded chicken, diced apple, dried cranberries, and chopped pecans in a large mixing bowl. Set aside while you make the dressing.
In a small bowl whisk together mayonnaise, dijon mustard, salt, and pepper to combine.
Add dressing to the shredded chicken, diced apple, dried cranberries and chopped pecans.
Stir to combine.
Serve on hearty whole grain bread with fresh lettuce leaves.
