How To Make a Creamy Cranberry, Apple, Pecan Chicken Salad

I adore a good chicken salad for lunch and this one’s extra special. This is not your typical, boring, ordinary, run-of-the-mill chicken salad. It has a delectable, creamy dressing that’s studded with tart, crisp bites of apple, sweet dried cranberries, and crunchy pieces of pecans. It takes an ordinary chicken salad and elevates it into a truly decadent lunch treat that you are thoroughly going to enjoy. Not only is it utterly delicious, but it takes just a few minutes to make.

Start by coring and chopping a small apple into bite sized pieces. I use a Granny Smith apple because I like the tart flavor it gives this salad, but you could use your favorite apple like a Fuji of Gala apple. Either would be delicious.

Roughly chop pecans.

Shred chicken breasts.

Place shredded chicken, diced apple, dried cranberries, and chopped pecans in a large mixing bowl. Set aside while you make the dressing.

In a small bowl whisk together mayonnaise, dijon mustard, salt, and pepper.

Stir to combine.

Add the dressing to the bowl with the shredded chicken, diced apple, dried cranberries and chopped pecans.

Stir to combine. Add more mayonnaise, a tablespoon at a time, if the mixture seems too dry. 

Serve on hearty whole grain bread with fresh lettuce leaves.

  • cup mayonnaise

  • 3 cups cooked, shredded chicken breast meat
  • 1 small Granny Smith apple, cored and diced
  • cup dried cranberries
  • cup pecans, roughly chopped
