A Hearty Cast Iron Skillet Sausage Hash

  • Large cast iron skillet

Ingredients
  

  • 13.5 oz Kielbasa sausage, cut into ¼ inch thick slices
  • ½ large onion, diced
  • ½ red bell pepper, diced
  • 4 medium potatoes, peeled and diced
  • 3 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp Kosher salt
  • ½ tsp pepper
  • cups cheddar cheese, shredded
  • sour cream, to serve
  • salsa or hot sauce, to serve

Instructions
 

  • Melt butter in a large cast iron skillet over medium heat.
  • Add diced potatoes and cook, stirring frequently until they start to soften, about 8-10 minutes.
  • Add diced onions to the skillet and continue cooking until onions turn translucent, about 5 minutes.
  • Add diced red bell pepper, stir to combine.
  • Add garlic powder, paprika, salt and pepper, stir to combine.
  • Add sliced sausage, and stir to combine with everything in the skillet.
  • Continue cooking, stirring frequently to prevent burning, until potatoes are soft and sausage is heated through.
  • Top hash with a layer of cheese and cover pan. Turn off heat and allow cheese to melt before serving.
  • Serve topped with a dollop of sour cream and hot sauce or your favorite salsa.
