A Hearty Cast Iron Skillet Sausage Hash

It's quick and easy to cook up this inexpensive, hearty meal on your stovetop using just one pan; making clean up a snap.

- 13.5 oz Kielbasa sausage, cut into ¼ inch thick slices
- ½ large onion, diced
- ½ red bell pepper, diced
- 4 medium potatoes, peeled and diced
- 3 tbsp butter
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp Kosher salt
- ½ tsp pepper
- 1½ cups cheddar cheese, shredded
- sour cream, to serve
- salsa or hot sauce, to serve
Melt butter in a large cast iron skillet over medium heat.
Add diced potatoes and cook, stirring frequently until they start to soften, about 8-10 minutes.
Add diced onions to the skillet and continue cooking until onions turn translucent, about 5 minutes.
Add diced red bell pepper, stir to combine.
Add garlic powder, paprika, salt and pepper, stir to combine.
Add sliced sausage, and stir to combine with everything in the skillet.
Continue cooking, stirring frequently to prevent burning, until potatoes are soft and sausage is heated through.
Top hash with a layer of cheese and cover pan. Turn off heat and allow cheese to melt before serving.
Serve topped with a dollop of sour cream and hot sauce or your favorite salsa.
