- 1 wheel Brie cheese
- ½ cup fig jam
- ⅔ cup pecans, chopped
- 1 tbsp fresh rosemary, chopped
- drizzle of honey, to serve
- 1 loaf French bread baguette, sliced
- assorted crackers or vegetables, optional
Preheat oven to 350 degrees.
Place wheel of brie cheese in the freezer for 15-20 minutes. This makes it easier to cut off the rind.
Remove wrapper and use a sharp knife to cut off the top of the rind.
Place the wheel of cheese in an oven safe dish, cut side up.
Spread fig jam over wheel of cheese in an even layer.
Bake, uncovered, for 15 minutes in preheated oven.
Remove cheese from oven and top with a layer of the chopped pecans.
Return cheese to the oven and bake for an additional 5-10 minutes or until the cheese is hot and melted.
Remove from the oven and sprinkle cheese with freshly chopped rosemary and drizzle with honey.
Serve hot with baguette bread slices or crackers for scooping.
