Beefy Ramen Noodle Bowl

Ingredients
  

  • 2 (3oz) pkgs Ramen noodles with seasoning packets
  • 16 oz sirloin steak, cut into ½ inch thick strips
  • 1 tbsp oil
  • ½ red bell pepper, cut into thin strips
  • 1 medium carrot, thinly sliced
  • 1 stalk celery, thinly sliced on the bias
  • 6 oz snap pea pods, cut in half
  • ½ cup water
  • 2 tbsp teriyaki sauce
  • 1 tsp fresh ginger, minced
  • ¼ tsp red pepper flakes
  • 1 tbsp fresh parsley, chopped
  • 1 stalk green scallion, thinly sliced

Instructions
 

  • Cook ramen noodles according to package directions. Drain and set aside
  • Place oil in a wok and heat over medium high heat.
  • Add red bell peppers, pea pods, carrots and celery and stir fry 2-3 minutes or until vegetables are crisp tender. Remove from wok.
  • Add sirloin steak strips to the wok and stir fry for 2-3 minutes until cooked medium rare.
  • Return the bell pepper, pea pods, carrots and celery to the wok.
  • Add the cooked ramen noodles, the seasoning packets from ramen noodle packages, water, parsley, teriyaki sauce, ginger and red pepper flakes.
  • Stir fry until heated through, about 1-2 minutes and liquid has reduced and thickened.
  • Serve garnished with sliced green scallions.
