Chicken Lettuce Wraps

This meal is proof that healthy can be delicious! Not only is it a flavor packed meal that's also good for you but it's easy to prepare as well!

- 1 lb ground chicken
- 1 tbsp olive oil
- iceberg lettuce leaves, remove the outer leaves carefully, keeping them intact
- 1 large red bell pepper, seeded and diced
- 1 medium red onion, diced
- 1 cup carrots, peeled and shredded
- 2 cups Napa or green cabbage, shredded or cut into thin strips
- 2 cloves garlic, minced
- 2 tsp fresh ginger, minced
- 1 bunch sliced green onions, for serving
- 1 bunch chopped fresh cilantro, for serving
- ¼ cup chopped peanuts, for serving
- 4 cups cooked white rice, optional
For the sauce:
- 4 tbsp soy sauce
- 3 tbsp rice vinegar
- 3 tbsp sweet chili sauce
Cook the ground chicken in vegetable oil over medium heat until cooked through, breaking it up into small crumbles as it cooks. Drain off any excess fat.
Add diced red bell pepper, diced red onion, shredded carrots and shredded cabbage to the pan with the chicken. Cook stirring frequently, until vegetables are tender, about 4-5 minutes.
Add the minced garlic and fresh ginger. Cook till fragrant, about 1 minute.
Pour in the soy sauce, rice vinegar and chili sauce. Stir and simmer the mixture for 3-4 minutes, or until heated through and all the ingredients are well combined.
Remove meat mixture from heat and scoop it onto lettuce leaves.
Top with sliced green onions, chopped cilantro and chopped peanuts to serve.
OPTIONAL: Serve lettuce wraps with a side of white rice.
