Copycat Taco Bell Enchiritos

Will Taco Bell ever bring back this old school favorite? No worries, now you can make the iconic favorite in your own kitchen with this easy recipe that tastes just like the ones you enjoyed as a child.

Ingredients
  

For the filling:

  • 1 lb ground beef
  • 2 tbsp cornstarch
  • ¾ cup water
  • 4 tsp chili powder
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp paprika
  • ¼ tsp cumin
  • ¼ tsp garlic salt
  • ¼ tsp sugar
  • 1 tsp dried minced onion
  • ½ tsp beef bouillon powder

For the sauce:

  • 7.5 oz bottle of Taco Bell mild taco sauce

To assemble:

  • 8 six inch flour tortillas,
  • 2 cups cheddar cheese, shredded
  • ½ cup onions, diced
  • 2.25 oz can of sliced black olives, drained

Instructions
 

Prepare the filling:

  • Mix together all the spices, chili powder, onion powder, garlic powder, salt, paprika, ground cumin, garlic salt, sugar, dried minced onion and bouillon powder. Set aside.
  • Combine cornstarch and water in a small bowl to make a slurry. Set aside.
  • Brown ground beef in a skillet over medium heat, breaking it up into small crumbles with a wooden spoon as it cooks. Drain off excess fat.
  • Add spices and cornstarch slurry to the beef in the skillet. Stir to combine. Cook until mixture thickens, about 3-5 minutes.

Assemble Enchiritos:

  • Warm tortillas in the microwave for a few seconds in-between damp paper towels until they soften.
  • Layer each tortilla with shredded cheddar cheese, beef filling, and diced onion. Roll tightly.
  • Place each rolled tortilla seam side down on a microwave safe plate.
  • Top with taco sauce, some shredded cheddar cheese, and sliced olives.
  • Microwave on high for 1-2 minutes until cheese is melted. Serve hot.
