Copycat Texas Roadhouse Herbed Rice

This easy to make copycat version of Teas Roadhouse seasoned rice is easy to make right on your stovetop and it's the perfect side to serve with steak, pork chops, or grilled chicken.

Equipment

  • medium saucepan with tight fitting lid

Ingredients
  

  • ¼ cup butter
  • 1 cup long grain white rice
  • ½ cup onion, finely diced
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cups chicken broth
  • 4 oz can of sliced mushrooms, drained
  • 3 tbsp chopped fresh parsley, for garnish

Instructions
 

  • Melt butter in a sauce pan over medium heat.
  • Once the butter is melted add the diced onion and cook in the butter until soft and translucent, about 3-4 minutes.
  • Add the rice and cook until lightly toasted and coated in the butter, about 4-5 minutes.
  • Stir in paprika, garlic powder, salt and pepper. Cook until spices "bloom" and are incorporated into the rice and fragrant, about 1 minute.
  • Stir in chicken broth and sliced mushrooms. Stir to combine.
  • Increase heat to high and bring mixture to a boil, stirring occasionally.
  • Once broth comes to a boil, cover pan with a tight fitting lid and reduce heat to lowest setting.
  • Cook over very low heat, covered for 25 minutes or until the rice has absorbed all the liquid in the pan.
  • Fluff rice with a fork and garnish with freshly chopped parsley to serve.
