Cowboy Casserole Skillet Meal

Ground beef & baked beans in a luscious barbecue sauce & topped with flaky biscuits. Everyone will enjoy this quick & easy, stick-to-your-ribs, skillet meal.

Equipment

  • large cast iron skillet or oven safe skillet

Ingredients
  

  • 1 lb ground beef
  • 28 oz baked beans
  • ½ lb bacon
  • 1 small yellow onion, diced
  • ½ cup barbecue sauce
  • ½ cup ketchup
  • 2 tbsp yellow mustard
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp smoked paprika
  • 2 tbsp brown sugar
  • 1 tube refrigerated jumbo size flakey biscuits
  • sliced green onion, for garnish

Instructions
 

  • Preheat oven to 350℉.
  • Cut bacon into ½ inch pieces and cook in a large oven safe skillet over medium heat until browned. Remove bacon, set aside.
  • Add onion and ground beef to the skillet. Brown ground beef in the skillet breaking it up with a wooden spatula until cooked through and onion is soft.
  • Drain off excess fat.
  • Stir in baked beans, barbecue sauce, ketchup, mustard, garlic powder, salt, pepper, smoked paprika and brown sugar.
  • Bring mixture to a simmer, stirring occasionally.
  • Remove from heat and top with biscuits.
  • Place skillet in the oven and bake for 15-20 minutes or until biscuits are cooked through and golden brown.
  • To serve garnish each serving with sliced green onions if desired.
