Cracker Barrel Copycat Mini Meatloaf Recipe

- 1 ½ lb ground beef
- 2 large eggs, beaten
- ⅔ cup milk
- 32 Ritz crackers (one entire sleeve), crushed
- 1 medium onion, chopped
- 4 oz sharp cheddar cheese, grated
- 1 tsp Worcestershire sauce
- 1 tsp salt
- ½ tsp pepper
For the Sauce:
- ½ cup ketchup
- ½ cup Honey Barbecue sauce
- 2 tbsp yellow mustard
Preheat oven to 350°F.
Place beef, onion, cracker crumbs, milk, beaten eggs, shedded cheese, Worcestershire sauce, salt and pepper in a large mixing bowl.
Combine all the ingredients together with your hands. Do not overwork the mixture.
Divide mixture into eight equal sized portions and press mixture into mini loaf pan.
Bake for 30 minutes or until loaves reach an internal temperature of 160°F.
Combine ketchup, barbecue sauce and mustard in a small bowl.
Remove meatloaves from the oven and top each loaf with a generous layer of the sauce.
Return to the oven and bake for an additional 10 minutes.
Serve each meatloaf on a bed of creamy mashed potatoes. Serve with extra sauce and add your favorite vegetable on the side to round out the meal.
