Mix together softened cream cheese, green onions and crab meat until well combined.
Lay down a wonton wrapper on your worksurface.
Place about a teaspoon of the crab/cream cheese mixture in the center of the wonton wrapper.
Dip your finger in the bowl of water and moisten the edges of the wonton wrapper.
Fold wrapper in half to form a triangle.
Press edges together to seal in the filling, pressing out any noticeable big pockets of air.
Place a dab of water on the two opposing corners and bring outside points towrds the center. Press together points forming nice little envelopes.
Heat oil in a large frying pan, oil should be about ½ to 1 inch deep.
Once oil is hot, use tongs and fry wontons, a few at a time, in the hot oil until nicely browned, turning them over ½ way through cooking so they brown evenly on both sides.
Remove wontons from the oil with tongs and drain on paper towels.
Serve warm with Sweet Hot Chili sauce, Sweet & Sour sauce or Soy sauce for dipping.
