Creamy Avocado Egg Salad

Adding smokey bacon and creamy avocado to egg salad produces the most devour-able egg salad you will ever eat. Utterly delicious!

- 4 strips bacon, cooked and crumbled
- 3 hard boiled eggs, peeled
- 2 medium avocados, diced
- ⅓ cup red onion, finely diced
- ¼ cup mayonnaise
- ½ tsp Kosher salt
- ½ tsp black pepper
- 4 slices whole grain bread, lightly toasted
- Arugula or spinach leaves
- tomato slices
- alfalfa sprouts
In a mixing bowl, mash hard boiled eggs with a fork.
Add red onion, salt, pepper and diced avocado. Mash ingredients together with a fork.
Add mayonnaise and stir to combine and you have a creamy mixture.
Taste and season with additional salt if needed.
Spread egg salad on a toasted piece of whole grain bread.
Top with tomato slices, sprouts, and arugula.
Top with another slice of toasted bread.
