Creamy Avocado Egg Salad

Adding smokey bacon and creamy avocado to egg salad produces the most devour-able egg salad you will ever eat. Utterly delicious!

Ingredients
  

  • 4 strips bacon, cooked and crumbled
  • 3 hard boiled eggs, peeled
  • 2 medium avocados, diced
  • cup red onion, finely diced
  • ¼ cup mayonnaise
  • ½ tsp Kosher salt
  • ½ tsp black pepper
  • 4 slices whole grain bread, lightly toasted
  • Arugula or spinach leaves
  • tomato slices
  • alfalfa sprouts

Instructions
 

  • In a mixing bowl, mash hard boiled eggs with a fork.
  • Add red onion, salt, pepper and diced avocado. Mash ingredients together with a fork.
  • Add mayonnaise and stir to combine and you have a creamy mixture.
  • Taste and season with additional salt if needed.
  • Spread egg salad on a toasted piece of whole grain bread.
  • Top with tomato slices, sprouts, and arugula.
  • Top with another slice of toasted bread.
  • Enjoy!
