Creamy Corn Casserole

Move over green beans, there's a new casserole in town that's fast becoming the new family favorite on the holiday table!

Equipment

  • 13 X 9 inch oven safe casserole dish

Ingredients
  

  • 2 15 oz cans creamed corn
  • 2 15 oz cans whole kernel corn, drained
  • 2 cups sour cream
  • 2 pkgs Jiffy corn bread mix
  • 2 tsp baking powder
  • 2 large eggs
  • 2 sticks butter, melted
  • 2 cups cheddar cheese, grated

Instructions
 

  • Preheat oven to 350℉.
  • Grease a 13 x 9 inch oven safe casserole dish. Set aside.
  • In a large mixing bowl combine creamed corn, drained corn, Jiffy corn bread mix, baking powder, eggs, melted butter, sour cream and 1½ cups of the grated cheddar cheese.
  • Stir together until well combined.
  • Transfer the mixture to prepared casserole dish and top with remaining cheddar cheese.
  • Bake for 50-60 minutes until heated through and a toothpick inserted in the middle comes out clean. Bake until edges are lightly browned and crisp.

Notes

Recipe can be cut in half if serving fewer people.
