- 1 tbsp butter
- 1 large egg
- 1 tbsp mayonnaise
- salt and pepper, to taste
Place butter in a ramekin and melt on high heat in the microwave for 20-30 seconds.
Swirl the melted butter around the ramekin to coat the inside of the dish with the melted butter. Set aside.
Whisk together the egg and the mayonnaise until you have a smooth and creamy egg batter.
Pour the egg batter into the buttered ramekin.
Microwave on high for 40-50 seconds or until the egg is cooked through. Cook time may vary slightly depending on your microwave.
Season with salt and pepper to serve.
OPTIONAL: Top with a sprinkle of freshly grated Parmesan cheese if desired.
