Creamy Spinach Gnocchi Soup

Ingredients
  

  • 32 oz jar vodka pasta sauce
  • 64 oz chicken broth
  • 10 oz bag fresh spinach leaves, roughly chopped
  • 2 lbs potato gnocchi
  • salt and pepper, to taste
  • ½ cup parmesan cheese, grated

Instructions
 

  • Pour vodka sauce and chicken broth in a large saucepan and bring to a simmer over medium high heat.
  • Simmer for 20 minutes, stirring occasionally.
  • Add the chopped spinach leaves to the broth and cook for 2-3 minutes until the spinach wilts and cooks down.
  • Add the gnocchi and stir. Simmer for 4-5 minutes or until gnocchi are tender and cooked through and float to the top.
  • Taste and season with salt and pepper.
  • To serve; top each bowl with grated Parmesan cheese.
  • Pair with a freshly baked loaf of garlic bread for dipping into the soup.
