Creamy Spinach Gnocchi Soup

- 32 oz jar vodka pasta sauce
- 64 oz chicken broth
- 10 oz bag fresh spinach leaves, roughly chopped
- 2 lbs potato gnocchi
- salt and pepper, to taste
- ½ cup parmesan cheese, grated
Pour vodka sauce and chicken broth in a large saucepan and bring to a simmer over medium high heat.
Simmer for 20 minutes, stirring occasionally.
Add the chopped spinach leaves to the broth and cook for 2-3 minutes until the spinach wilts and cooks down.
Add the gnocchi and stir. Simmer for 4-5 minutes or until gnocchi are tender and cooked through and float to the top.
Taste and season with salt and pepper.
To serve; top each bowl with grated Parmesan cheese.
Pair with a freshly baked loaf of garlic bread for dipping into the soup.
