Ingredients
  

  • 32 oz Tomato & Roasted Red Pepper Soup
  • 5 oz goat cheese
  • freshly ground pepper
  • shredded Parmesan cheese, optional

Instructions
 

  • Pour soup into a large saucepan.
  • Add goat cheese.
  • Bring soup to a simmer over medium heat, stirring occasionally.
  • Lower heat, simmer until cheese is completely melted and soup is smooth, creamy and heated through.
  • Serve with freshly ground pepper.
  • Top with a pinch of shredded Parmesan cheese if desired.
