Ingredients

cornmeal

onion,
diced
vegetable oil,
for frying
shredded Jack or Cheddar cheese,
for serving
Ranch dressing,
for serving
Instructions
In a large bowl, mix together flour, sugar, cornmeal, baking powder and salt.
Then add milk and stir until most of the lumps are gone.
Stir in paprika, onion powder and pepper.
Stir to combine and you have a thick batter, similar to a pancake batter.
Add the diced onions, and mix until well blended.
Heat 1/4 inch oil in skillet over medium high heat.
Drop 1/4 cup batter into the hot oil.
Flatten batter slightly with the back of a spatula, then brown fritters on both sides until crispy, golden brown.
Drain on paper towel, and top with shredded cheese if desired.
Serve with a side of Ranch dressing for dipping.
Notes
Add 1/4 cup cooked, chopped bacon to the batter to make them extra decadent!
