Bring a large pot of salted water to a boil over high heat. Cook pasta according to package directions. Reserve ½ cup of the pasta water.
While pasta is cooking, heat olive oil over medium heat in a large skillet.
Once the oil is hot add diced shallot and cook until translucent, about 3 minutes.
Add minced garlic and cook until fragrant about 1 minute.
Add tomato paste and cook stirring continuously for about 2-3 minutes.
Add vodka and then stir in the heavy cream and pepper flakes and stir to combine.
Drain pasta and return to the pot. Add vodka sauce, reserved pasta water, butter, and grated parmesan cheese to the cooked pasta.
Stir until butter and Parmesan cheese are melted and all the ingredients are combined.
Taste and season with salt and pepper if needed.
Top with additional grated Parmesan cheese to serve.
Serve with a crisp green salad and crusty French bread to round out the meal.
