Greek Cucumber Salad

You'll find all your favorite Mediterranean flavors in this easy to prepare salad topped with crumbled Feta cheese and cracked black pepper.

Ingredients
  

  • 1 large cucumber, peeled and sliced
  • 2 cups cherry tomatoes, cut in half
  • 1 large green bell pepper, seeded and diced
  • ½ cup pickled red onion slices
  • 1 tbsp sun dried tomatoes, chopped

For the dressing:

  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • ½ tsp freshly cracked black pepper
  • ½ cup Feta cheese, crumbled

Instructions
 

Prepare salad ingredients:

  • Peel and slice cucumber.
  • Cut cherry tomatoes in half.
  • Seed and dice a large green bell pepper.
  • Place sliced cucumber, tomato halves, and diced green bell pepper in a large mixing bowl.
  • Top with pickled red onions, minced sun dried tomatoes, and half the crumbled Feta cheese. Set aside.

Make the dressing:

  • Place olive oil, Balsamic vinegar, salt and pepper in a glass jar.
  • Seal jar with a lid and shake vigorously to combine.
  • Pour dressing over salad and toss to combine.
  • Taste and season with additional salt if needed.

To Serve:

  • Sprinkle salad with the remaining half of the crumbled Feta cheese and some freshly cracked black pepper.
