Grinder Salad

You'll find all the flavors of a grinder sandwich in this tangy, creamy salad. There's a reason it's gone viral...it's freaking delicious !

For the Salad:
- 1 small head iceberg lettuce, roughly chopped
- ⅓ cup red onion, sliced
- 1 cup cherry tomatoes, cut in half
- ½ cup sliced pepperoncini, drained
- ½ cup sliced salami, cut into small pieces
- ½ cup mild cheddar cheese, cut into small cubes
- ½ cup turkey, shredded
For the Dressing:
- ¾ cup Mayonnaise
- 2 tbsp red wine vinegar
- ⅛ cup Parmesan cheese, finely grated
- 1 clove garlic, minced
- 1 tsp dried Oregano
- ½ tsp Kosher salt
- ¼ tsp black pepper
- ⅛ tsp red pepper flakes
Place sliced red onion, pepperoncini peppers, cherry tomatoes, cubed cheddar cheese, chopped salami, and shredded turkey in a large mixing bowl.
Top with chopped iceberg lettuce. Set bowl aside while you make the dressing.
Place mayonnaise, red wine vinegar, grated Parmesan cheese, minced garlic, oregano, salt, pepper, and red pepper flakes in a glass jar.
Seal jar with a lid and shake well to combine all the dressing ingredients.
Pour dressing over the salad ingredients in the mixing bowl and toss to coat with the dressing.
Serve immediately. Top each serving with freshly ground black pepper if desired.
