Grinder Salad

You'll find all the flavors of a grinder sandwich in this tangy, creamy salad. There's a reason it's gone viral...it's freaking delicious !

Ingredients
  

For the Salad:

  • 1 small head iceberg lettuce, roughly chopped
  • cup red onion, sliced
  • 1 cup cherry tomatoes, cut in half
  • ½ cup sliced pepperoncini, drained
  • ½ cup sliced salami, cut into small pieces
  • ½ cup mild cheddar cheese, cut into small cubes
  • ½ cup turkey, shredded

For the Dressing:

  • ¾ cup Mayonnaise
  • 2 tbsp red wine vinegar
  • cup Parmesan cheese, finely grated
  • 1 clove garlic, minced
  • 1 tsp dried Oregano
  • ½ tsp Kosher salt
  • ¼ tsp black pepper
  • tsp red pepper flakes

Instructions
 

  • Place sliced red onion, pepperoncini peppers, cherry tomatoes, cubed cheddar cheese, chopped salami, and shredded turkey in a large mixing bowl.
  • Top with chopped iceberg lettuce. Set bowl aside while you make the dressing.
  • Place mayonnaise, red wine vinegar, grated Parmesan cheese, minced garlic, oregano, salt, pepper, and red pepper flakes in a glass jar.
  • Seal jar with a lid and shake well to combine all the dressing ingredients.
  • Pour dressing over the salad ingredients in the mixing bowl and toss to coat with the dressing.
  • Serve immediately. Top each serving with freshly ground black pepper if desired.
