Korean Braised Potatoes

An incredibly rich, slighly sweet and savory potato side dish.

Ingredients
  

  • 5-6 medium potatoes, peeled and cut into ½ inch chunks
  • water
  • 4 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 2 tsp sesame oil
  • ½ tsp sesame seeds
  • 2 stalks green onions, sliced

Instructions
 

  • In a small bowl, prepare sauce by combining minced garlic, soy sauce, sesame oil and honey.
  • Place potato chunks in a saucepan. Add just enough water to almost cover them.
  • Add the garlic/soy/sesame/honey sauce. Stir to combine.
  • Bring to a boil and simmer potatoes over medium high heat, stirring occasionally for 15-20 minutes; until potatoes are fork tender and sauce has reduced and has thickened to a sticky glaze.
  • Remove from heat.
  • To serve, sprinkle with sesame seeds and chopped green onions. Enjoy!
