Korean Braised Potatoes

An incredibly rich, slighly sweet and savory potato side dish.

- 5-6 medium potatoes, peeled and cut into ½ inch chunks
- water
- 4 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp honey
- 2 tsp sesame oil
- ½ tsp sesame seeds
- 2 stalks green onions, sliced
In a small bowl, prepare sauce by combining minced garlic, soy sauce, sesame oil and honey.
Place potato chunks in a saucepan. Add just enough water to almost cover them.
Add the garlic/soy/sesame/honey sauce. Stir to combine.
Bring to a boil and simmer potatoes over medium high heat, stirring occasionally for 15-20 minutes; until potatoes are fork tender and sauce has reduced and has thickened to a sticky glaze.
Remove from heat.
To serve, sprinkle with sesame seeds and chopped green onions. Enjoy!
