Linguini with Clam Sauce

You can enjoy this tasty pasta dish even when you are short on time.

Ingredients
  

  • 8 oz linguini
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ¼-½ tsp red pepper flakes
  • 2 6 oz cans minced clams, reserve juice
  • ½ cup white wine
  • juice of 1 lemon
  • salt and freshly ground black pepper
  • freshly chopped parsley

Instructions
 

  • Cook pasta al dente, according to package directions.
  • While the pasta is cooking, prepare clam sauce.
  • Heat oil in a large skillet.
  • Once oil is hot, add minced garlic and red pepper flakes. Stir and cook until fragrant, about 1 minute.
  • Add wine and reserved clam juice from the two cans of clams. Increase heat, and bring mixture to a boil. Cook until sauce is reduced by about half.
  • Add pepper, clams and lemon juice. Heat through.
  • Add cooked linguini to the sauce in the pan and toss to coat.
  • Season with salt if needed.
  • Serve topped with a sprinkle of fresh chopped parsley.
