Mac & Crack Pasta Salad

A pasta salad made with the holy trinity of delicious flavors; crisp smokey bacon, sharp cheddar cheese and Ranch seasoning.

Ingredients
  

  • 16 oz pasta, penne, bowtie, or elbow
  • cup mayonnaise
  • cup sour cream
  • 3 tbsp Ranch seasoning mix
  • ½ cup pickled jalapeno peppers, chopped
  • 5 strips bacon, cooked crisp and crumbled
  • 8 oz sharp cheddar cheese, shredded
  • 1 bunch green onions, sliced

Instructions
 

  • Boil pasta according to the package directions. Drain and rinse with cold water. Set aside.
  • Cook bacon until crisp and crumble. Set aside.
  • Shred cheddar cheese. Set aside.
  • Slice green onions. Set aside.
  • Combine, mayonnaise, sour cream, Ranch seasoning, bacon, pickled jalapeños, green onions and shredded cheddar cheese in a large mixing bowl. Reserve some of the crumbled bacon, shredded cheddar cheese, and green onions for garnish if desired.
  • Stir together.
  • Add cooked pasta and stir to combine.
  • Serve immediately or cover and refrigerate for a couple hours before serving.
  • Top salad with reserved crumbled bacon, shredded cheddar cheese, and sliced green onions to serve.
