Mac & Crack Pasta Salad

A pasta salad made with the holy trinity of delicious flavors; crisp smokey bacon, sharp cheddar cheese and Ranch seasoning.

- 16 oz pasta, penne, bowtie, or elbow
- 1¼ cup mayonnaise
- 1¼ cup sour cream
- 3 tbsp Ranch seasoning mix
- ½ cup pickled jalapeno peppers, chopped
- 5 strips bacon, cooked crisp and crumbled
- 8 oz sharp cheddar cheese, shredded
- 1 bunch green onions, sliced
Boil pasta according to the package directions. Drain and rinse with cold water. Set aside.
Cook bacon until crisp and crumble. Set aside.
Shred cheddar cheese. Set aside.
Slice green onions. Set aside.
Combine, mayonnaise, sour cream, Ranch seasoning, bacon, pickled jalapeños, green onions and shredded cheddar cheese in a large mixing bowl. Reserve some of the crumbled bacon, shredded cheddar cheese, and green onions for garnish if desired.
Stir together.
Add cooked pasta and stir to combine.
Serve immediately or cover and refrigerate for a couple hours before serving.
Top salad with reserved crumbled bacon, shredded cheddar cheese, and sliced green onions to serve.
