Equipment

  • vegetable peeler
  • sharp knife

Ingredients
  

  • 3 ripe mangos
  • 3 large tomatoes
  • cup red onion, diced
  • ½ cup cilantro, roughly chopped
  • 3 limes, juiced

Instructions
 

  • Peel mangos using a vegetable peeler.
  • Carefully cut mango flesh away from the center seed and cut the flesh into chunks.
  • Place mango chunks in a mixing bowl.
  • Chop tomato, cilantro and red onion.
  • Add red onion, cilantro and tomato to the bowl with the mango chunks.
  • Juice limes and add to the bowl with the other ingredients.
  • Stir to combine.
  • Serve with tortilla chips.

Notes

Delicious spooned over your favorite grilled fish or other seafood like grilled shrimp.
