Mediterranean Flat Bread

Stop buying overpriced flatbread at the market when you can easily make it at home using just a handful of basic, simple ingredients.

Equipment

  • 1 Cast iron skillet for best results

Ingredients
  

  • 3 cups all purpose flour, plus more for dusting
  • 4 tsps baking powder
  • 1 tsp Kosher salt
  • cups plain Greek yogurt, full fat is best
  • olive oil, for frying

Instructions
 

  • Place flour, baking powder and salt in a large mixing bowl and stir to combine.
  • Add the Greek yogurt to the bowl and combine it with the dry ingredients using your hands until you have a sticky dough that holds together.
  • Dust your work surface with flour and turn the dough out onto your work surface.
  • Shape the dough into a round disk and divide it into 8 equal sized pieces.
  • Roll each piece of dough into a ball with your hands.
  • Roll out each piece of dough into a thin round with a rolling pin.
  • Heat olive oil in a skillet over medium heat.
  • When oil is hot, fry each piece of flatbread until golden brown patches appear, and large bubbles form on the surface, about 2-3 minutes on each side. Flip and cook on the second side.
  • Repeat until all the dough is cooked, adding more olive oil to the skillet as needed.
  • Serve warm.
