Mediterranean Flat Bread

Stop buying overpriced flatbread at the market when you can easily make it at home using just a handful of basic, simple ingredients.

- 3 cups all purpose flour, plus more for dusting
- 4 tsps baking powder
- 1 tsp Kosher salt
- 1½ cups plain Greek yogurt, full fat is best
- olive oil, for frying
Place flour, baking powder and salt in a large mixing bowl and stir to combine.
Add the Greek yogurt to the bowl and combine it with the dry ingredients using your hands until you have a sticky dough that holds together.
Dust your work surface with flour and turn the dough out onto your work surface.
Shape the dough into a round disk and divide it into 8 equal sized pieces.
Roll each piece of dough into a ball with your hands.
Roll out each piece of dough into a thin round with a rolling pin.
Heat olive oil in a skillet over medium heat.
When oil is hot, fry each piece of flatbread until golden brown patches appear, and large bubbles form on the surface, about 2-3 minutes on each side. Flip and cook on the second side.
Repeat until all the dough is cooked, adding more olive oil to the skillet as needed.
Serve warm.
