Mini Egg Bites

Mighty but small, these little egg bites are packed with all your favorite breakfast flavors.

- non-stick cooking spray
- 6 large eggs, beaten
- salt and pepper, to taste
- ½ cup red onion, finely diced
- ½ cup green bell pepper, finely chopped
- ½ cup ham, chopped
- 1 cup pepper jack cheese
- 4 tbsp parmesan cheese, grated
Preheat oven to 350℉.
Spray muffin tin generously with non-stick cooking spray.
Place a teaspoon of diced red onion, diced green bell pepper and chopped ham into each muffin cup.
Top with shredded pepper jack cheese.
Beat eggs in a small bowl and season with salt and pepper.
Pour eggs into each muffin cup filling it about ¾ full.
Sprinkle a pinch of parmesan cheese onto each cup.
Bake for 25-30 minutes or until eggs are set and the tops of the egg bites begin to brown.
Remove pan from the oven and allow to cool for about 5 minutes before removing from the pan.
Serve egg bites hot with salsa or hot sauce if desired.
