Mushroom, Mizithra Spaghetti

A quick and easy to make pasta topped with grated Mizithra cheese and sautéed mushrooms makes this a crave worthy meal any night of the week.

- 16 oz sliced mushrooms
- ½ cup butter
- 2 tbsp olive oil
- 16 oz spaghetti noodles, cooked according to package directions
- 6 oz Mizithra cheese, finely shredded
- freshly cracked black pepper
Cook pasta according to package directions. Drain.
In a large skillet heat olive oil and half the butter over medium heat, until butter has melted.
Add sliced mushrooms and sauté until mushrooms release their moisture. Continue cooking until all the liquid has cooked off.
Add remaining butter and cook until butter has melted.
Toss cooked mushrooms and butter with cooked pasta.
Add half the Mizithra cheese and combine.
To serve, place pasta with cheese and mushrooms on each plate and top with additional grated Mizithra cheese and freshly cracked black pepper.
