Mushroom, Mizithra Spaghetti

A quick and easy to make pasta topped with grated Mizithra cheese and sautéed mushrooms makes this a crave worthy meal any night of the week.

Ingredients
  

  • 16 oz sliced mushrooms
  • ½ cup butter
  • 2 tbsp olive oil
  • 16 oz spaghetti noodles, cooked according to package directions
  • 6 oz Mizithra cheese, finely shredded
  • freshly cracked black pepper

Instructions
 

  • Cook pasta according to package directions. Drain.
  • In a large skillet heat olive oil and half the butter over medium heat, until butter has melted.
  • Add sliced mushrooms and sauté until mushrooms release their moisture. Continue cooking until all the liquid has cooked off.
  • Add remaining butter and cook until butter has melted.
  • Toss cooked mushrooms and butter with cooked pasta.
  • Add half the Mizithra cheese and combine.
  • To serve, place pasta with cheese and mushrooms on each plate and top with additional grated Mizithra cheese and freshly cracked black pepper.
