Equipment

Ingredients

  • 2 cups flour
  • 2 cups instant rolled oats
  • 2 sticks butter, softened
  • 1 cup brown sugar, packed
  • ½ cup white sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tbsp vanilla
  • cups semi-sweet chocolate chips

Instructions

  • Preheat oven to 350 ℉.
  • Line cookie sheets with parchment paper or silpat liners.
  • Place all the cookie ingredients in the bowl of a stand mixer (except for chocolate chips); softened butter, flour, rolled oats, brown sugar, white sugar, egg, egg yolk, baking powder, baking soda, salt, and vanilla.
  • Combine ingredients on low to medium speed until well combined.
  • Add chocolate chips and stir slowly on low speed just to incorporate chocolate chips into the cookie dough.
  • Use a cookie scoop to form evenly sized balls and place them on prepared cookie sheets, 2 inches apart.
  • Bake for 11-13 minutes. Edges of the cookies should be a very light brown and the centers will look slightly undercooked when they are ready to come out of the oven.
  • Allow cookies to rest for five minute on the cookie sheet before transferring them to a wire rack to cool completely.
