Oatmeal Chocolate Chip Dump Cookies

- 2 cups flour
- 2 cups instant rolled oats
- 2 sticks butter, softened
- 1 cup brown sugar, packed
- ½ cup white sugar
- 1 large egg
- 1 egg yolk
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tbsp vanilla
- 1½ cups semi-sweet chocolate chips
Preheat oven to 350 ℉.
Line cookie sheets with parchment paper or silpat liners.
Place all the cookie ingredients in the bowl of a stand mixer (except for chocolate chips); softened butter, flour, rolled oats, brown sugar, white sugar, egg, egg yolk, baking powder, baking soda, salt, and vanilla.
Combine ingredients on low to medium speed until well combined.
Add chocolate chips and stir slowly on low speed just to incorporate chocolate chips into the cookie dough.
Use a cookie scoop to form evenly sized balls and place them on prepared cookie sheets, 2 inches apart.
Bake for 11-13 minutes. Edges of the cookies should be a very light brown and the centers will look slightly undercooked when they are ready to come out of the oven.
Allow cookies to rest for five minute on the cookie sheet before transferring them to a wire rack to cool completely.
