Oatmeal Raisin Cookies

Soft and chewy with a lovely hint of cinnamon. It's easy to get more fiber in your diet with these lovely cookies.

Ingredients
  

  • cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup unsalted butter, softened
  • ¼ cup sugar
  • cups packed brown sugar
  • 2 large eggs
  • tsp vanilla extract
  • 1 cup raisins
  • cups old fashioned rolled oats

Instructions
 

  • Preheat oven to 350° F.
  • Grease or line 2 cookie sheets.
  • In a mixing bowl combine, flour, baking soda, baking powder, salt, cinnamon and nutmeg. Set aside.
  • In the mixing bowl of a stand mixer, beat together, softened butter, sugar, brown sugar, and vanilla.
  • Add eggs one at a time until well combined.
  • Set speed to low and slowly add flour mixture until well combined.
  • Add oatmeal and raisins.
  • Using a dough scoup shape dough into 1 ½ inch balls and place about 2 inches apart on prepareed cookie sheets.
  • Flatten balls of dough into ½ inch thick rounds.
  • Bake 12-14 minutes or until cookies are lightly browned and begin to crisp along the edges.
  • Cool on cookie sheet for about 5 minutes, then transfer cookies onto a wire rack to cool completely.
