dried Mayflower beans, Peruno beans, Black beans or Pinto beans

salt

white onion,
cut in half, papery skin removed

cloves
garlic,
papery skin removed

strips
bacon
1-2
dried Arbol red chile peppers
water
Instructions
Place beans in a colander and rinse under cold water.
Transfer beans to a saucepan.
Add salt, onion, garlic cloves, peppers and bacon to the sauceepan.
Cover with enough water so that beans are completely covered by about 1 inch of water.
Bring to a boil.
Stir well and cover. Reduce heat to low and simmer for about an hour.
Stir and check pan occasionally to make sure beans stay covered in water. Add hot water to the pan if needed.
Cook until beans are soft and creamy but not mushy.
Remove the bacon strips, onion, garlic cloves, and peppers. Discard.
Serve beans hot.
