Olga's Authentic Mexican Beans

Ingredients
  

  • 1 lb dried Mayflower beans, Peruno beans, Black beans or Pinto beans
  • 1 tsp salt
  • 1 small white onion, cut in half, papery skin removed
  • 2 cloves garlic, papery skin removed
  • 3 strips bacon
  • 1-2 dried Arbol red chile peppers
  • water

Instructions
 

  • Place beans in a colander and rinse under cold water.
  • Transfer beans to a saucepan.
  • Add salt, onion, garlic cloves, peppers and bacon to the sauceepan.
  • Cover with enough water so that beans are completely covered by about 1 inch of water.
  • Bring to a boil.
  • Stir well and cover. Reduce heat to low and simmer for about an hour.
  • Stir and check pan occasionally to make sure beans stay covered in water. Add hot water to the pan if needed.
  • Cook until beans are soft and creamy but not mushy.
  • Remove the bacon strips, onion, garlic cloves, and peppers. Discard.
  • Serve beans hot.
