Oven Baked Parmesan Crusted Cod

Who said eating healthy can't be delicious? You can easily get this delectably flavorful oven baked fish on the table in under 30 minutes.

Ingredients
  

  • 20 oz cod fillets
  • 1 large egg, beaten with a splash of water
  • ½ cup Parmesan cheese, finely grated
  • ¼ cup Panko bread crumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ crushed red pepper flakes
  • 1 lemon, cut into wedges

Instructions
 

  • Preheat oven to 425℉.
  • Cover a cookie sheet with a piece of foil for easy cleanup. Spray with non-stick cooking spray. Set aside while you prepare the fish.
  • In a shallow bowl, beat the egg with a tiny splash of water.
  • In another shallow bowl, stir together Parmesan cheese, Panko bread crumbs, garlic powder, onion powder, smoked paprika, and red pepper flakes.
  • Wash the cod fillets under cold running water. Pat dry with paper towels.
  • Cut fish into 4-5 equal sized pieces.
  • Dip each piece of fish into the beaten egg to completely coat it.
  • Then dip into the seasoned Parmesan/Panko crumb mixture.
  • Place on the prepared cookie sheet.
  • Bake in preheated oven for 10-12 minutes or until fish flakes easily with a fork.
  • Serve with lemon wedges and a side of tartar sauce if desired.
