Portuguese Cucumber Tomato Salad

This traditional salad is served everywhere in Portugal. Sweet tomatoes and cool cucumbers are paired with the crisp sharpness of red onions and lightly dressed with olive oil and red wine vinegar. Perfect to serve with all your summer meals.

- 2-3 beefsteak or plum tomatoes, sliced
- 1 cucumber, sliced
- 1 red onion, sliced
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- Kosher salt & freshly ground pepper, to taste
Layer cucumber and tomato slices on a large platter.
Top with sliced red onion.
Drizzle with olive oil and red wine vinegar.
Season with salt and freshly ground pepper.
Serve immediately.
