Roasted Parmesan Mushrooms

Five ingredients never tasted so good! These mushrooms are the perfect side to almost any meal.

- 20 oz. sliced baby bella mushrooms
- 3-4 tbsp olive oil
- ¼ cup grated parmesan cheese
- ¼ cup breadcrumbs
- 2 tsp grated parmesan cheese
- 2 tbsp chopped fresh Parsley
Rinse mushrooms and allow excess water to drain off.
Place washed mushrooms in a large bowl. Add olive oil and toss to coat musrooms with the olive oil.
Add ¼ cup Parmesan cheese and ¼ cup breadcrumbs. Stir to combine with olive oil coated mushrooms.
Place in a casserole dish and spread out in an even layer.
Sprinkle 2 teaspoons Parmesan cheese evenly over the mushrooms.
Bake in a 375° oven for 30-35 minutes until heated through and liquid has cooked off.
Top with chopped parsley to serve.
