Rosemary, Garlic, Perfect Prime Rib Roast Beast

A holiday favorite! It's easy to cook up a flavorful, perfect prime rib roast.

- 10-12 lb bone-in standing rib roast
- ½ cup olive oil
- 1 head garlic, minced
- ¼ cup ground black pepper
- ½ cup kosher salt
- ½ cup fresh rosemary, chopped
Remove roast from the fridge 2 hours prior to cooking, to allow it to come to room temperature.
Preheat oven to 350℉.
Rub olive oil over the entire roast.
Massage salt and pepper onto the top, and sides of the roast.
Rub minced garlic and chopped rosemary onto the roast.
Place roast, rib side down in an oven safe pan.
Roast for 12-15 minutes per pound or until an instant read thermometer reads five degrees below desired doneness. Roast will continue to cook after it's removed from the oven. See recipe notes below for desired doneness.
Remove thee roast from oven and tent with a sheet of foil. Allow roast to rest for 20-30 minutes before slicing it.
After roast has rested, slice to desired thickness and serve with au jus or horseradish sauce.
120℉ for rare.
125℉ for medium rare.
130℉ for medium.
135℉ for medium well.
