Rum Balls

- 3½ cups vanilla wafer cookies
- 3 cups pecans
- ½ cup corn syrup
- ¼-½ cup rum
- 2 tsp rum extract
- powdered sugar
Place vanilla wafer cookies in the bowl of a food processor. Pulse until you have a mixture resembling coarse sand. Transfer cookie crumbs to a large mixing bowl.
Place pecans in the bowl of a food processor. Pulse until finely chopped.
NOTE: Don't over process nuts or you will end up with nut butter.
Add chopped nuts to the mixing bowl with the pulverized vanilla wafer cookies.
Add corn syrup, Rum, and Rum extract.
Use your hands to combine all the ingredients until the dough holds together when pressed into a clump.
Roll the dough into small balls.
Roll the balls in powdered sugar to coat them completely.
Store in an airtight container until ready to serve. These will keep nicely for several days at room temperature.
NOTE: You may want to re-roll them in more powdered sugar again before serving.
3½ cups whole vanilla wafer cookies equals 2 cups ground cookies.
3 cups pecan pieces equals 2 cups finely ground pecans.
