Sherry's Tasty Baked Egg Cups

These tasty egg cups are so easy to make. A low carb treat you can enjoy guilt free anytime.

Equipment

  • silicone muffin tin

Ingredients
  

  • 2 strips bacon, cooked crisp and crumbled
  • 4 slices deli ham, cut in half
  • ½ cup cheddar cheese, shredded
  • 8 large eggs
  • salt and pepper, to taste
  • hot sauce, optional

Instructions
 

  • Preheat oven to 350℉.
  • Spray muffin tin with non-stick cooking spray.
  • Cook bacon until crisp. Drain on a paper towel and crumble.
  • Place a slice of ham in each muffin cup.
  • Add about a tablespoon of shredded cheese in each cup.
  • Crack an egg into each cup, being careful not to break the yolks.
  • Top with bacon bits.
  • Season with a little salt and a generous amount of pepper.
  • Bake at 350℉ for 10 to 15 minutes, or until eggs are cooked to your liking.
  • Carefully remove egg cups from the muffin tin cups and serve with a dash of hot sauce and a side of toasted bread if desired.
