Simple Simon's Drunken Beer Can Chicken

Ingredients
  

  • 1 whole chicken
  • 1 can beer
  • ¼ cup Kosher salt
  • ¼ cup brown sugar
  • ¼ cup Paprika
  • 2 tbsp black pepper
  • 1 tbsp garlic powder
  • extra virgin olive oil

Instructions
 

  • Preheat barbecue grill to 325°-350°.
  • In a small bowl, combine salt, sugar, pepper, paprika and garlic powder.
  • Remove gizzards from chicken cavity and discard.
  • Wash chicken under cold water and pat dry.
  • Rub the entire chicken with olive oil.
  • Sprinkle the spice mixture onto the bird. Use hands to rub spices onto the bird so that the entire bird is covered.
  • Open a can of beer and take a few sips.
  • Place opened can of beer in the center of the chicken roaster.
  • Slide chicken onto the roaster over the can of beer.
  • Place chicken on the barbecue and close lid.
  • Cook chicken over indirect heat for 1 hour 45 minutes or until juices run clear.
  • Remove chicken on the roaster from the barbecue. Let chicken rest for 10-15 minutes before removing from roaster and carving.
