- 4 slices bacon, cut into ½ inch pieces
- ½ small onion, finely diced
- ½ small red bell pepper, chopped
- 28 oz can pork and beans
- ¼ cup barbecue sauce
- 2 tbsp brown sugar
- 1 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tsp Worcestershire sauce
- ½ tsp black pepper
Preheat oven to 325℉.
Cook bacon in a cast iron skillet until browned and crispy. Remove the cooked bacon from the skillet using a slotted spoon and place it on a paper towel lined plate to drain off excess fat.
Add the diced onion and red bell pepper to the bacon fat in the skillet. Cook over medium heat until onions are translucent and peppers are soft, about 5 minutes. Turn off heat.
Add beans, bbq sauce, brown sugar, mustard, pepper and Worcestershire sauce to the skillet.
Stir to combine all the ingredients.
Top beans with cooked reserved bacon.
Place skillet in preheated oven and bake uncovered for 1-1½ hours until nicely thickened.
Serve hot.
