Thai Chicken Salad

For the dressing:
- 5 tbsp peanut butter
- 3 tbsp water
- 2 tbsp soy sauce
- 1 tbsp lemon juice
- 1 tbsp honey
- ½ tsp sesame oil
- 1 tsp fresh ginger, grated
- 1 tsp garlic powder
- 2 tbsp rice vinegar
- ½ tsp hot sauce
- ½ tsp koser salt
- ¼ tsp pepper
For the salad:
- 1 small head green cabbage, thinly sliced
- 3 cups shredded cooked chicken
- 2 medium carrot, peeled and shredded
- 1 small bunch green onions, sliced
- 1 red bell pepper, diced
- ½ cup peanuts, chopped
- ½ cup cilantro, roughly chopped
- ¼ cup fresh basil, roughly chopped
Add all the salad dressing ingredients to a small bowl and whisk to combine. Set aside.
Place sliced cabbage, chopped red bell pepper, shredded carrots, cilantro, basil, sliced green onions, chopped peanuts and shredded chicken in a large bowl.
Add salad dressing to the bowl.
Toss to combine all the salad ingredients with the dressing.
Serve immediately.
