Blackberry Cobbler

You know summer is in full swing when you can purchase big fat juicy blackberries like these at the grocery store!  I love them just plain; they are so plump, sweet, juicy and flavorful!  Each one is a big bite of summer goodness!  Today I want to share something a little more special, an easy dessert recipe that captures the delicious summer sweetness of fresh picked blackberries.

I have to admit, I’m the apple cinnamon freak at our house.  I love anything apple and cinnamon.  If you want me to eat an old sneaker, spread some apple pie filling on it and I will make short order of it, LOL!  It’s my husband that is crazy about all things blackberry, but I have to admit, that I love them too.

This recipe is summer sunshine and all the sweetness of summer in a bowl.  Top it with either freshly whipped cream or a scoop or two of vanilla ice cream; either way is utterly delicious!

Not a baker?  No worries, this recipe is super simple to prepare with just a small handful of ingredients.  You can’t really mess it up, even if you try!

To begin, wash the berries under some cold water, drain them, then pat them gently with a paper towel to remove as much moisture as you can.  Don’t obsess over this, just gently pat them a little bit and place them in a bowl. 

First order of business is to macerate the berries.  Don’t let that term scare you!  It just means that you are going to add a cup of sugar to the berries in the bowl, and stir to combine them with the sugar.  Let the berries macerate in the bowl on the counter for about 30 minutes.  

You are now officially a baker!  You can impress all your family and friends and let them know that you know how to macerate berries!  They will be duly impressed! 

While the berries are macerating, it’s time to prepare the dough for the cobbler.

In another bowl mix together the Bisquick, 2 tablespoons sugar, 1/3 cup milk, salt and 1 tablespoon melted butter.  Stir together with a wooden spoon until a soft dough forms.  Set aside.

Preheat your oven to 375 degrees.

In a 1 quart baking dish, evenly spread out the blackberry mixture covering the bottom of the pan. 

Drop dough by tablespoonful’s onto the blackberry mixture.

Sprinkle dough with 1 tablespoon of sugar.

Bake for 45 minutes and check it to see if it is done.  You are trying to get a nice lightly browned crust, if it’s looking too pale, bake it a bit longer until you have a golden brown cobbler crust and the blackberry mixture is hot and bubbly.

When you pull it out of the oven it will smell amazing, be bubbling like crazy and quite hot, so be very careful not to burn yourself!

Allow your cobbler to cool to room temperature if you can possibly wait that long!  It actually tastes best when served really warm with either a generous dollop of whipped cream or vanilla ice cream melting all over it.

  •   2 1/2 cups fresh blackberries, washed and patted dry 
  •   1 cup plus 2-3 tablespoons sugar 
  •   1 cup Bisquick 
  •   1/2 teaspoon salt 
  •   1 cup milk 
  •   1 tablespoon butter, melted

In another bowl mix together 1 cup Bisquick, 2 tablespoons sugar, 1/3 cup milk, ½ teaspoon salt and 1 tablespoon melted butter.  Stir together with a wooden spoon until a soft dough forms.  Set aside.

Drop dough by 6 tablespoonful’s onto the blackberry mixture.

Sprinkle dough with 1 tablespoon of sugar.

Bake for 45 minutes and check it to see if it is done.  Continue baking until cobbler crust is a rich golden brown and the blackberry mixture is hot and bubbly. 

Allow cobbler to cool to room temperature.  Serve with either a generous dollop of whipped cream or vanilla ice cream.
