Combine The Trifecta Of Flavors For An Outstanding Crack Chicken Soup

Hands down, one of our all time favorite recipes are Crack Potatoes. If I was a single girl, I know I would have received marriage proposals over this recipe!

A “crack“ed recipe contains the trifecta of flavor deliciousness; Ranch seasoning, bacon and cheddar cheese. When you combine these three ingredients in a savory recipe, magical, tasty, deliciousness ensues!

This soup is rich and creamy and utterly lip smacking delectable! It’s not only utterly delicious but it’s super easy to make too!

So when I stumbled upon this recipe at Tenrecipes.com for a Crack Chicken soup I knew I had to give it a try. You simply cannot go wrong with a recipe that includes this trifecta of flavors; Ranch, bacon and cheese!

Start by cooking the bacon. Since it calls for 10 strips, the easiest method for cooking it is in the oven. If you have never cooked bacon in the oven check out the below link to find out how easy it is to do, along with other easy methods for cooking bacon.

Once you have the bacon going, whisk together the cream of chicken soup and milk in a large mixing bowl.

Stir in the chicken broth and set aside. 

In a large dutch oven pot, sauté diced onion in 1 tablespoon olive oil until onions are soft and translucent; about 5-8 minutes.

Add minced garlic and cook until fragrant, about 1 minute.

Add the soup/milk/chicken broth mixture to the sautéed onions/garlic in the pot and stir to combine. 

Add peas, carrots and mushrooms.

VARIATION: Not a fan of peas, carrots or mushrooms? Add your favorite vegetables instead. Broccoli, asparagus or spinach would all be delicious additions.

Stir in ranch seasoning, and garlic powder. 

Add in cubed cream cheese and stir to combine with the soup.

Continue to stir and cook over medium high heat until cream cheese has completely melted. 

Stir in shredded chicken.

Add cooked, crumbled bacon. Reserve a little bacon to use as garnish.

Break pasta into 2-3 inch lengths and add to the soup.

Increase heat and bring to a simmer. Cook for 7-10 minutes until pasta is soft.

Add shredded cheddar cheese and stir until cheese is melted and soup is heated through. 

Serve topped with diced bacon bits and shredded cheddar cheese.

Ingredients
  

  • 1 small onion, finely diced
  • 1 tbsp olive oil
  • 3 cups shredded, cooked, chicken
  • 10.75 oz condensed cream of chicken soup
  • 6 cups chicken broth
  • 1 cup milk
  • 8 oz cream cheese, cut into 1 inch chunks
  • 1 cup frozen peas and carrots
  • 10 slices cooked bacon, crumbled
  • 1 oz envelope Ranch seasoning mix
  • 4 cloves garlic, minced
  • 1 tsp garlic powder
  • 2 cups cheddar cheese, grated
  • 8 oz angel hair pasta

Instructions
 

  • Whisk together chicken soup and milk in a large mixing bowl. Stir in chicken broth. Set aside.

  • Add peas, carrots and mushrooms.
  • Stir in ranch seasoning, minced garlic and garlic powder.
  • Add cubed cream cheese and stir to combine with the soup. Continue to stir and heat over medium heat until cream cheese has completely melted.
  • Stir in shredded chicken and diced bacon. Reserve a little bacon to use as garnish.
  • Increase heat and bring soup to a good simmer. Simmer for 10-15 minutes.
  • Break pasta into 2-3 inch lengths and add to the soup.
  • Cook for 7-10 minutes until pasta is soft.
  • Add shredded cheddar cheese and stir until cheese is melted and soup is heated through.
  • Serve topped with diced bacon bits and shredded cheddar cheese.
