Dorito’s Taco Bake

My kids are crazy for Cool Ranch flavored Dorito’s! When I decide I’m going to make this casserole I literally have to stick a note on the bag of chips in the pantry that says, “Don’t eat these, I need them for a recipe”. Then I cross my fingers and hope they’ll still be there in a couple days when I actually need them. I give it a 50/50 chance…LOL! This easy to make casserole has all your favorite taco flavors and it’s topped with a layer of crunchy Dorito’s and smothered with melted cheese. You’ll never get any complaints from your kids when this delicious casserole makes an appearance on the table for dinner. Add some shedded lettuce, chopped tomatoes and a dollop of sour cream to serve. All the kids are interested in, is the cheesy Dorito’s topping. Little do they know there’s a load of veggies hidden inside. Yes, I’m sneaky that way. A mom’s gotta do what a mom’s gotta do to get a few veggies into her kids…right?

How To Make Doritos Taco Casserole:

Simple ingredients added to a pound of ground beef produce a tasty meal that’s easy to prepare and everyone will enjoy.

Preheat oven to 350℉.

Spray an oven safe casserole dish with non-stick spray. Set aside.

Brown ground beef in a large skillet over medium heat, breaking it up into small crumbles with a wooden spoon as it cooks.

Add diced onion and red bell pepper and continue to cook until onions and peppers soften.

Drain off excess grease.

Add taco seasoning and water to the pan. 

Simmer until the liquid in the pan evaporates and the beef mixture thickens.

Stir in the drained can of Rotel tomatoes with green chilis and the sour cream.

Stir to combine everything together.  Remove from heat.

Place ⅓ of the crushed chips in the bottom of the prepared casserole dish in an even layer.

Spoon ½ the beef mixture over the chips in the casserole dish in an even layer.

Top with a 1½ cups of shredded cheese.

Top with another ⅓ of the chips.

Top with the remaining ½ of the beef mixture and finish with the remaining ⅓ of the crushed chips and a final layer of shredded cheese.

Bake in the preheated oven for 20-25 minutes or until cheese is melted and hot and bubbly.

While the casserole bakes in the oven shred some Iceberg lettuce and chop up a tomato.

Top each serving with some shredded lettuce, chopped tomatoes and a dollop of sour cream.

This casserole is a huge hit with my family. It only calls for a handful of ingredients, it comes together quickly and it tastes great! The crushed Doritos add loads of flavor that everyone seems to love. A huge shout out to Sarah Brekke who posted this recipe on Allrecipes.com. The only modification I made to her recipe was to leave out the can of black beans since I have a family of bean haters, but I honestly think they would be great. This recipe will be making an appearance on our table many more times in the future, especially if I can keep a bag of Doritos hidden in the pantry from my chip eating, snack loving kids! Ingredients
  

  • 1 lb ground beef
  • ½ medium onion, chopped
  • 1 small red bell pepper, seeded and diced
  • 1 oz taco seasoning
  • ½ cup water
  • 14.5 oz Rotel diced tomatoes with green chilis, drained
  • 1 cup sour cream
  • oz bag of Cool Ranch or Nacho Cheese flavored Doritos, crushed
  • 3 cups Colby Jack cheese, shredded

Toppings:

  • 1 large tomato, chopped
  • 2 cups Iceberg lettuce, shredded
  • ½ cup sour cream

Instructions
 

  • Preheat oven to 350℉.
