Carb loving girl here! Yes, I’m sharing yet another potato recipe with you today. I love potatoes almost as much as I love dough. I confess have a sorta unhealthy obsession with all things starchy. Today I’m sharing a really easy to make recipe for some of the best potatoes you will ever eat. They are loaded with bacony goodness and topped with loads of melted cheddar cheese. Add a sprinkle of crisp green onions and a dollop of creamy sour cream…what’s not to love about that?
These potatoes can be cooking way in the oven while you are working on your main dish. They are delicious with literally everything; beef, pork, chicken…heck they would even taste good with your sneakers…LOL!
I love to serve them as a side with my favorite Crispy Chicken Sandwiches. You MUST give this sandwich a try! It rivals any chicken sandwich you can get at a restaurant, or famous drive thru…guaranteed!!!
I don’t know about you but my mouth is watering and I want to get this on the table sooner, rather than later. Lets get this delectable side going!
Start by placing bacon slices on a foil lined cookie sheet in a single layer.
Place bacon in the oven and set temperature to 400°F and cook for 20-30 minutes until crisp. Use tongs to remove bacon from the cookie sheet and drain cooked bacon strips on paper towels.
Chop bacon into ½ inch pieces. Set aside.
Dice potatoes into ½ inch cubes.
Spread out potato cubes on the cookie sheet in a single layer in the same cookie sheet you cooked the bacon in.
Toss to coat the potato cubes in the bacon fat in the bottom of the cookie sheet. Season with salt and pepper.
Bake in the oven for 30 minutes.
Remove and toss potatoes with a spatula. Return to the oven and bake for another 30 minutes or until potatoes are fork tender and soft.
Once potatoes are soft, use spatula to toss once more and top with reserved bacon and shredded cheddar cheese.
Return to the oven and bake for another 5-8 minutes or until cheese is melted, bubbly and hot.
Serve potatoes topped with a sprinkle of green onions and a generous dollop of sour cream.
These potatoes are so easy to make and packed with bacony, cheesy flavor! They are absolutely amazing! Sure you can always toss a potato in the oven and serve up a baked potato, but these are so easy to make and packed with flavor you can make them any time you desire!
Cheesy Bacon Roasted Potatoes

- cookie sheet
Ingredients
- 3-4 large potatoes, peeled
- 1 lb bacon
- 2 cups cheddar cheese, shredded
- salt & pepper
- 2 stalks green onions, sliced
- sour cream, to serve
Instructions
