Do you have a cherry tree that’s loaded with fresh sweet cherries? Wondering what to do with all of them? Even if you don’t have a cherry tree, there’s no need to worry because all the local fruit stands are brimming with sweet summer cherries right now. Whether you have a cherry tree or pick up some fresh summer cherries at a local fruit stand, a fresh cherry cobbler is the perfect easy to make, summertime dessert to bake up.
Not only is this cobbler delicious, it’s also extremely easy to make! No mixer needed!
Just stir together the ingredients in a mixing bowl, top with cherries and bake it up!!! The hardest part? Waiting for it to cool down before digging into it!!!
You will need a cherry pitter to remove the pits from the cherries. You should be able to find one like this one at most larger retailers or on Amazon for around $10-$12.
Start by preheating the oven to 350°F.
Use a little butter to grease a 12 inch cast iron skillet. Set aside.
In a mixing bowl, stir together the dry ingredients; 1 cup flour, 1 1/2 tsp. baking powder, 1 cup sugar and 1/4 tsp salt.
Add the wet ingredients to the dry ingredients; the melted butter, heavy whipping cream, half & half, and vanilla.
Whisk until smooth and there are no lumps in the batter.
Pour the batter into the prepared, buttered cast iron skillet.
Sprinkle pitted cherries evenly over the batter in the skillet.
Sprinkle ¼ cup sugar evenly over the cherries and batter.
About 10 minutes prior to the cobbler being done, sprinkle the top with another 2 teaspoons of sugar.
Bake for a total of about 50 minutes or until the top and edges are golden brown and a toothpick inserted in the center comes out clean.
Remove cobbler from the oven and allow it to cool for 20 minutes before serving.
Serve cobbler warm topped with either freshly whipped cream or vanilla ice cream.
Truly one of the easiest and tastiest summer desserts I have enjoyed all summer. If you have loads of cherries and you are wondering what to do with all of them, try this. This is the perfect recipe!!! The cast iron pan gives the edges a crusty chew, with a tender crumb throughout, and a sweet cherry or two in every delectable bite. - ⅔ cup half & half, at room temperature
- ⅓ cup heavy whipping cream, at room temperature
- 1 tsp vanilla extract
- 3 cups fresh cherries, pitted
- ¼ cup sugar, plus 2 teaspoons
- whipped cream or vanilla ice cream, to serve
