If you bake sourdough bread on a fairly regular basis at some point you will end up with excess starter. Instead of pouring it out use it to make a loaf of this moist, tender banana bread. The probiotics in the sourdough starter give this bread a healthy nutritional boost, and gives it a light, tender crumb. It’s not overly sweet and the addition of chopped pecans gives it a lovely little crunch. The chocolate chips are just plain delicious and give this bread a decadent boost of chocolatey flavor that is sure to please. Stir everything together and bake it up; so very easy to make! Delicious with a cup of coffee or as an after school snack with a tall glass of ice cold milk.

In a small mixing bowl combine flour, salt and baking soda. Stir to combine dry ingredients. Set aside.
In a large mixing bowl mash bananas with a fork or use a pastry cutter.
Add starter, egg, vanilla, and softened butter to the mashed bananas. Stir to combine.
Add brown sugar and mix well.
Slowly add the dry ingredients to the bowl and stir until well combined.
Stir in the chopped pecans and chocolate chips.
Stir until all the ingredients are well combined.
Transfer batter into prepared loaf pan.
Bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean.
Allow loaf to cool on a rack to room temperature in the pan before turning out of the pan and slicing.

- 3 very ripe bananas
- 1 cup active sourdough starter
- 1 large egg
- 1 tsp vanilla
- ¾ cup brown sugar
- 1 stick butter, softened
- 1 cup semi sweet chocolate chips
- 1 cup pecans, roughly chopped
